Here is how to make a Spicy Chicken Veggie Bake

RECIPE GUIDE

6pcs Chicken πŸ— thighs

7pcs Orange carrots πŸ₯•, peeled and halved

7pcs Purple carrots

3pcs Onions, cut into quarters

1 Garlic πŸ§„ head, bashed

2 orange sweet potatoes, peeled and cut into cubes

1 Zucchini, chopped

1 Cauliflower, florets

1 Broccoli, florets

Celery stems, cut down to size

Celery leaves πŸƒ

Vegetable oil

Chili garlic sauce

Green chilies, diced

2pcs Tangerine 🍊 , zest and juiced

Lemon πŸ‹ zest

Thyme

Rosemary

Sea Salt, to taste

COOKING INSTRUCTIONS

In a roast pan, place pieces of halved orange carrots, cut onions pieces, bashed head of garlic, small cuts of orange sweet potatoes, cut zucchini pieces then florets of cauliflower and broccoli

Cut celery stems to size and add into to the bake pan with pieces of thyme leaves, rosemary sprigs and season generously with salt

Add 4tbs of oil, chili sauce, diced green chillies for heat, lemon zest and mix components in the pan

Snuggle pieces of chicken over previously placed ingredients, zest over tangerine and juice 2pcs

Add cut rosemary leaves/sprigs, pieces of fresh thyme and season generously the pieces of chicken with salt

Coat pieces of chicken with chili sauce, add diced green chilies

Place in the oven at 180ΒΊC for 30mins then crank up the heat close to end to brown the top of the chicken

Garnish with chopped up celery leaves and serve.
